Roast Beef Tenderloin

2 1/2 lb Beef Tenderloin
1/2 tsp. Salt
2T Olive Oil
1/2 tsp. Black Pepper
Preheat oven to 425 degrees. Place tenderloin on a rack in a pan. Rub oil over meat and season with salt and pepper. Roast at 425 degrees for 40-50 minutes. Meat thermometer reads 135 degrees for medium/rare. Remove from oven and cover with foil. Let stand covered for 15 minutes. The temperature will rise about 5 degrees during this time and the juices will redistribute.
